Today is my Dad's birthday.  He cracks me up because he always "says" he wants a low-fat birthday cake but I kid you not, when it's low-fat, then he says it's just OK (which is code for he doesn't like it).  So every year it's a challenge to truly make his cake low-fat but to hear a response of, "I think this cake is great."  Yes, ladies and gentlemen, I think I did it!  I made a Triple Chocolate Cheesecake with half the calories and fat of normal cheesecakes.  Now don't get me wrong, it probably could've been much healthier without so much chocolate but if you're going to make dessert why not slip in as much low-fat ingredients as possible?  I used fat-free sour cream, fat-free cream cheese, and splenda in the cake.  The only high-fat/high-sugar ingredients were the three different kinds of chocolate.  I even used a reduced fat cookie crust.   I also used margarine instead of butter.  All of this contributes to a much healthier cheesecake than it could've been. It could've been approximately 400 calories with about 25g of fat but I think I was able to get it down to about 175 calories, 8g of fat.  Now, don't get me wrong...I still wouldn't eat this (but the bite I had was to die for!) but if you're going to make it for people why not make it a little bit healthier?  We all need to play a part in tackling obesity.

JC Blueberry Pancakes with 1/4 cup sugar-free syrup

Banana

1 cup coffee with tsp. fat-free creamer

Snack -

JC Anytime Bar

Lunch -

JC Cheeseburger

Fresh green beans

Snack -

3/4 cup pineapple

Dinner -

 JC Lasagna

Salad (mixed greens, peppers, mushrooms, tomatoes) 2 tbsp. light ranch

Snack -

JC Chocolate Chip Snack Bar
